And 6 dozens of cookies later.

Before I ever start baking or cooking of any kind, I always take my wedding and engagement rings off. I failed to do so one time and had icing stuck between the diamonds for several days. To make it even worse, it was red icing. A couple of years ago I was given this cute ceramic cupcake that the top comes off. I've kept it in the kitchen ever since and always place my rings there before cooking.


Today Logan and I decided to have cookies and instead of buying some premade cookies at the store, we made our own. Now I'm going to be honest with you. When it comes to cookies, I can eat them without a problem. But I am awful when it comes to baking them. I never can seem to get them shaped right, they come out burnt, or something goes wrong all together. I was worried when we decided to bake two kinds of cookies this afternoon. Thankfully, things came out perfect. I made cookies based on what I already had in the pantry. The first to bake were oatmeal raisin cookies.

1 cup softened butter
1 cup granulated sugar
1 cup firmly packed brown sugar
2 eggs
1 tsp vanilla extract
2 cups all purpose flour
11/2 tsp cinnamon
1 tsp baking soda
1 tsp salt
3 cups uncooked old fashioned oats
1 cup raisins

Directions:
1. Preheat oven to 375.
2. Cream butter and sugars until smooth. Beat in eggs and vanilla.
3. Combine and blend flour, cinnamon, baking soda and salt.
4. Beat into creamed mixture.
5. Stir in oats and nuts.
4. Drop rounded spoonfuls onto baking sheet.
5. Bake 10-12 minutes.
Yield: 4 dozen cookies.

After the homemade oatmeal raisin cookies, Logan made some chocolate chip cookies from the box. He put in the egg, butter, and cookie mix all by himself and then used my hand mixer to mix everything together. The best part was when he ate the cookies and said that he should bake cookies all the time because they were good!
And once we were finished, we had 4 dozen oatmeal raisin cookies (I'm hoping the husband takes some to work tomorrow) and 2 dozen chocolate chip cookies.
